I am also very thankful that mama is not in hospital and feeling good enough to cook us a Thanksgiving feast. Sure she admits she relied heavily on Costco this year but it sure does taste fine!
She ended up in the ER with an infection, was mis-diagnosed, two days later her doctor got her started on the right treatment. I was gonna show you a picture of her arm but that would just ruin your turkey day, suffice to say she is on the mend and plans to return to work on Monday.
The cranberry-cornbread-sausage stuffing from Costco was yummy! Homemade cranberry sauce, home grown carrots. A precooked turkey breast, and real mashed potatoes with turkey gravy...delicious!
Cooking tip: be sure and mix some butter in your dressing...nothing worse than a constipated dry bird!

Okay, the constipated turkey picture......whew, glad I wasn't having to eat turkey after seeing that! Glad you are recovering well Sandy:) Your meal looks delicious!
ReplyDeleteMy stuffing tip...I don't put it in the turkey. I use what is called a meatloaf pan, which is basically one loaf pan inside the other, with the inside one sitting up from the other one slightly, and it has holes in the bottom to let the excess fat drain into the bottom pan. I pour liquid from the turkey pan over the stuffing several times during the cooking, and then cover it with foil if the top starts to dry out too much. Works great:)

ReplyDeleteI have Lymphedema due to having 14 lymph nodes removed during my mastectomy in 2012. Lymphedema results in swelling and the inability to fight infection in the affected limb due to poor lymph flow. I had an infection/celulitis in my arm...it just all of a sudden puffed up red and hard and painful and had red spots all over it. After 4 days of antibiotics it is finally looking and feeling better. Just part of the fallout from breast cancer treatment.

I do love Costco--We joined years ago when we lived in Anchorage, and it was always great fun to go there on a cold day in January for the samples, look at the books and just to see all the stuff--I still do that! :-) Take care, and know you're being thought of here in cold Virginia!
